What’s For Breakfast: Sprouted Egg Salad Fiber Bites

Add whatever veggies you like to these Bites, and you have breakfast! My preference would be to top them with micro greens and sprouts so that they look dainty, and add a layer of sliced bell peppers underneath the egg.

Any fantastic nutritionist will tell you that a breakfast full of fiber and protein is one which will keep cravings and hunger at bay until late in the day. You are trying to lose weight, or if you’re into eating healthy — these Sprouted Egg Salad Fiber Bites are PERFECT for you. I have been crushing 3 or 2 of them and simply put, it is my favorite breakfast that is new since you can make all of the ingredients beforehand and eat throughout the week.
The base of these bites — Scandinavian “GG” crackers. You can find them here on Amazon if your local store doesn’t carry them. They come in a couple of tastes (I prefer the Pumpkin Seed) and can be tragically boring and dry on their own, so I wanted to make a healthy but satisfying topping for them which was not a dip or hummus. The light bulb went off one morning as I recognized a fried egg would not exactly fit on top of one of these — but that eggs cooked in a different form would (so meta, I understand). Enter egg salad — created with eater and just a few ingredients. Making a great egg salad is quite straightforward. It comes down to perfect egg prep (begin in cool water, bring to a rolling boil, turn off heat, cover for 14 minutes, crack and peel) which causes a perfectly yellow, crumbly yolk. Ingredients

  • 2eggs (or more if you would like to make ahead for the week)
  • 2Scandinavian GG Crackers
  • 4tablespoonsshaved mini bell peppers
  • 4tbspsprouts and microgreens
  • 1tbspmayo for egg salad
  • 1squeeze lemon for egg salad
  • 1teaspoonapple cider vinegar for egg salad
  • 1teaspoonmustard for egg salad
  • 1/2teaspoonkosher salt for egg salad
  • 1/2teaspoonblack pepper for egg salad

Instructions

  1. Run cool water into a pan large enough to cover your eggs. Turn on heat and bring to a boil.
  2. While your eggs come to a boil, prepare your vegetables. Slice wash sprouts and microgreens and peppers.
  3. Once the eggs come to a rolling boil, then turn off the fire and cover, allowing to sit for 14 minutes (set a timer). When the timer goes off, drop the eggs into the sink so they crack all over, running them under water that is cool.
  4. Peel eggs with a spoon or fingers.
  5. Add lemon peel, mayo, mustard, apple cider vinegar, salt, and pepper into your own eggs and cut up into egg salad. Mix to your own liking.
  6. To create the Bites, layer veggies and egg salad on top of GG crackers. Enjoy!
