Ever since the dawn of healthful living blogs we have been making tasty, wholesome “cookie” recipes. We want cookies any time — breakfast, second breakfast, snack, second bite, dessert, dessert that is second! ; ) So, here is a recipe for banana snacks.


Then, mix in other ingredients (the snacks are brown from a healthy dose of cinnamon!)

Store them in the refrigerator when you are ready to enjoy them again and heat in a toaster oven.
They are like those cookies you can have at any moment. But, I don’t need to trick anyone into thinking that these are melt-in-your-mouth buttery, sugary cookies, so I call them “bites” instead. They are made with only five simple ingredients, and they are the perfect method to use some additional ripe bananas! Hence the name, “second chance!”

This recipe couldn’t be more easy. First, mash the bananas.

These are perfect warm in their, but it is also possible to mash them!
They’ll become just firm to the touch, but they are soft throughout.|

Ingredients

  • 4 ripe bananas
  • 1 cup quick oats (might need more or less depending on desired consistency)
  • 1/2  tsp cinnamon
  • Handful slivered almonds (Optional.    
  • Mash bananas with a fork until smooth and liquid-like.
  • Add remaining ingredients, using more quick oats if needed.
  • Spoon “dough” to a greased or parchment paper lined pan.


Spoon the mixture onto a baking sheet lined with parchment and bake.

Leave them out to be lunchbox-friendly or almonds were used by me for crunch, but feel free to use your favorite nut.
